Salina is the only establishment in Ishikawa Prefecture to have been certified by the True Neapolitan Pizza Association in Naples, Italy. In order to keep the “always delicious taste,” the dough contains a blend of six different types of flour and the salt mix is altered according to the season. Genovese is exquisite with the harmony of the fresh flavor of basil, the sweetness and sourness of tomatoes, and milky mozzarella cheese. Pizza Prosciutto Rocket

The plump and flavorful dough is the result of a two-day refrigerated fermentation. This is a recipe unique to Albero, inspired by the baguette fermentation method taught by a French customer. Prosciutto Rocket is a popular pizza with fresh rocket and prosciutto toppings added to the special dough. “I want to use my own ideas without being bound by definitions,” says the easygoing chef.
